VINIFICATION: Hand-picked grapes. Soft pressing with separation of free-run juice. Fermentation in cement tanks at 14° C.
SECOND FERMENTATION: Spring of the year following the harvest
AGING: 72 months on the lees on average
With a pale pink onion-skin colour, bright reflections with creamy foam, and fine and persistent perlage.
