Great attention to detail in vinification and long stays on the yeasts, enhance a traditional method with great personality, intense and vibrant aromas, and a fine and persistent perlage.

SOIL: Of alluvial origin, rich in calcareous sediments, from medium to deep

ALTITUDE: 150 meters above sea level

TRAINING: Guyot

VINIFICATION: Hand-picked grapes. Soft pressing with separation of free-run juice. Fermentation in cement tanks at 14° C.

SECOND FERMENTATION: Spring of the year following the harvest

AGING: 72 months on the lees on average

Aromas

With a pale pink onion-skin colour, bright reflections with creamy foam, and fine and persistent perlage.
Fragrant and complex smell, with hints of pomegranate, wild strawberries, and floral notes of cyclamen and toast.
Fresh on the palate and inviting to taste, harmonious and seductive.

Pairings

To pair with seafood and shellfish, semi-hard cheeses and soft cheeses. Perfect to accompany a fish risotto.
